'Rustic' soy milk {{ currentPage ? currentPage.title : "" }}

  • 1 cup prepared soy beans (see instructions)

  • 5 cups filtered water

  • 2 dates, pitted and roughly chopped

  • 2 pinches of salt

The amount above makes two flip-top bottles’ worth of soy milk. The recipe can be halved, and/or extra milk can be frozen, to prevent the excess from spoiling.

Prepping soy beans

Soak dry soy beans in filtered water overnight.

Rinse soaked beans and steam in a steamer basket for 20 minutes (make sure the steaming water stays replenished).

Allow beans to cool completely by leaving them out or putting them in the fridge/freezer.

Cool beans are ready to use! You can prepare a large batch of beans and freeze the extra to use later.

Making the milk

Add all ingredients to a high-speed blender and blend until smooth.
